Kim and I decided to make dinner for her parents when we visit them pre-Christmas, so last night I thought I'd practice making some gyros style sanwich items. On the list was Tzatziki, which is a cucumber/yogurt dressing available at every Greek place I've been to, and pita, a Greek flatbread that commonly puffs up to form pockes when cooked properly (I was only able to get one to pocket).
I've wanted to find a good flatbread recipe for a while, and this one was simple and turned out pretty tasty, even if I did cook the softness out of the pitas. The Tzatziki called for yogurt, garlic, dill, cucumber, olive oil, lemon juice, and salt. I substituted a bit of sour cream for the olive oil and used lime juice/zest instead of lemon, and it turned out very well. I'm not completely certain Kim's parents will be crazy about the idea of eating gyros (also commonly known as souvlakis), but at least we'll have grilled steak, chicken and lamb as backup.
